Ingredients for Spanish Horchata


4 cups water (1 liter)


9 oz tiger nuts (chufas) – Alternatively, almonds or other nuts can be used.


1 cinnamon stick


The peel of one lemon


4 Medjool dates or 8 Deglet Nour dates – A natural sweetener for healthier results.

How to Make Spanish Horchata


1. Soak the Tiger Nuts


Begin by soaking the tiger nuts in water for 12 to 24 hours. Longer soaking makes them easier to blend and digest, ensuring a smoother horchata.


2. Blend the Mixture


Drain and rinse the soaked tiger nuts. Blend them with 2 cups of water (500 ml) until smooth. Transfer this mixture into a glass jar and add a cinnamon stick and the peel of one lemon. Allow the mixture to rest in the refrigerator for at least 2 hours to infuse the flavors.


3. Strain and Sweeten


Strain the mixture using a nut milk bag, cheesecloth, or a clean napkin to remove solids. Blend the strained liquid with the dates and the remaining 2 cups of water (500 ml).


4. Chill and Serve


Dear Lykkers! Refrigerate the horchata until cold. For serving, sprinkle some ground cinnamon on top for added flavor. Ice cubes can also be added, especially during warm weather.
