Lavang Latika is a traditional Bengali sweet made during Durga Puja and Diwali. It's incredibly easy to make and tastes absolutely delicious!
This sweet treat is similar to Suryakala or Chandrakala, and you'll find it hard to go wrong with this recipe. It's simple, flavorful, and can be stored in the fridge for up to a week.

Oil for deep frying
Cloves as needed
• 1 cup All Purpose Flour (Maida) • 2 tbsp Ghee • A pinch of Salt • Water, as needed
• ¾ cup Khoya (Mawa) • 2.5 tbsp Sugar • 2 tbsp Mixed Nuts • ½ tsp Cardamom Powder
• 1 cup Sugar • ½ cup Water

Step 1: Prepare the Dough
Take flour, salt, and ghee in a bowl. Rub the ingredients together until it resembles coarse breadcrumbs. Gradually add water and knead into a soft dough. Set it aside and let it rest while preparing the filling.
Step 2: Make the Filling
In a separate bowl, mix the khoya, cardamom powder, nuts, and sugar. Stir well and set the mixture aside.
Step 3: Shape the Dough
Divide the dough into equal portions. Take each portion and roll it out into a thin poori. Place a spoonful of the filling in the center of each poori. Fold both sides over the filling, then fold the top and bottom to create a parcel shape. Secure the top with a clove.
Step 4: Prepare the Sugar Syrup
In a pan, combine sugar and water. Heat it and bring it to a boil. Simmer the syrup until it reaches a one-string consistency. To test this, lift a spoon from the syrup and check if it forms a string-like thread.
Step 5: Deep Fry the Parcels
Heat oil for deep frying. Drop the parcels into the oil and fry them on medium heat until golden and crispy. Once fried, remove them from the oil and place them in the syrup.

Step 6: Coat the Parcels in Syrup
Toss the fried parcels well in the syrup and let them sit for 3 to 4 minutes to soak in the sweetness.
Step 7: Drain and Serve
Drain the excess syrup and allow the Lavang Latika to cool. Serve and enjoy!
